Can Duoc traditional fresh sausage - Ms. Chau's sausage production facility has become the only representative of Long An province to enter the TOP 121 typical national culinary dishes in phase I of 2022, certified and honored by the Vietnam Culinary Culture Association.
The traditional fresh sausage of Ms. Luu Thi Kim Chau's family has been famous in Can Duoc for over 40 years. Ms. Chau is the third generation in her family to continue this profession. Determined to bring the best and most delicious products to consumers, Ms. Chau always puts food hygiene and safety first, strictly and thoroughly controlling the input materials.
Ms. Luu Thi Kim Chau, owner of Co Chau sausage production facility in Can Duoc town, Can Duoc district, shared: "To maintain tradition, I still follow the traditional method, not following the market trend of using preservatives to extend the preservation time, and the ingredients must be especially fresh, prioritizing the current customer taste of reducing fat and spices."
On a normal day, Ms. Chau's facility produces 50 - 70kg of sausages, during peak times like Tet, the output increases to 500 - 700kg to meet customer demand. In addition to traditional fresh sausages, Ms. Chau also creates other types of sausages such as salted egg sausages, shrimp sausages, Taiwanese sausages, etc. With family secrets and marinating with aromatic wine according to her own recipe, Ms. Chau's sausages have created their own unique characteristics, contributing to making Can Duoc fresh sausages an indispensable part of the culinary culture of Long An people.
