Created by the Chinese community in the 20th century, Bac Xiu emerged as an interesting and attractive example of the culture of Saigon - Ho Chi Minh City when simultaneously blending three cultures: Chinese, Vietnamese and French.

A few words about silver

Bac xiu is a drink made from coffee mixed with milk, but the milk is more than the coffee. The word "bac xiu" comes from Cantonese and was commonly used by the Chinese in the trading area of Saigon - Cho Lon at that time. If called in full, it is called bac tay xiu phe, in which "bac" means white, "tay" means empty cup, "xiu" means a little and "phe" means coffee. Simply put, it is a drink made from hot milk mixed with a little coffee. Black coffee and milk coffee are a challenge for women and children, so the Chinese came up with the dish bac xiu by adjusting the ratio of coffee and milk to make it easier to drink.

Origin of silver

Bac xiu can be considered a drink that is a blend of three cultures: Chinese - French - Vietnamese. During the French colonial period in Vietnam (1858 - 1954), the Chinese living in Saigon seemed to be early in the business of shops, including opening coffee shops. In the beginning, women and children were not interested in drinking black coffee and milk coffee because they were bitter and difficult to drink. There was even a time when fresh milk was quite expensive, so people used condensed milk mixed with hot water instead.

Gradually, the bitter taste of coffee seemed to disappear and so the silver drink was born (because it uses more milk than coffee, which helps reduce the bitterness and creates a unique aroma for the drink). Moreover, silver drink is also enjoyed with fried dough sticks and fried bread every morning.

- Ready-to-drink coffee: 30ml

- Condensed milk: 30ml

- Unsweetened fresh milk: 100ml

- Tools: Egg beater (or foaming tool)

How to do it

- Step 1: Add ice to 1/3 of the glass height, then add 30ml of condensed milk.

- Step 2: Add ice to 2/3 of the glass height, then pour in 100ml of fresh milk. In addition, if you want the silver coffee to have a special flavor, you can add about 5ml of coconut milk.

- Step 3: Whisk the coffee in another cup until it has the desired foam.

- Step 4: Pour the freshly whipped coffee foam into a glass containing ice and milk. And that's it, you can enjoy it!
