Nam Dinh, the ancient land of Thanh Nam, has many famous dishes that still exist today. In addition to the specialty of beef noodle soup, this land in the southern part of the Red River Delta also has a rustic dish made from pork that is hard to resist, which is nem nam.
Nem nam specialty appeared from Giao Thuy district, Nam Dinh province. According to records, when Thien Truong palace became the second capital of King Tran, traditional craft villages were gradually formed, delicious specialties from all over the country gathered here to offer to the King. Among them, the rustic nem nam dish is one of the delicious dishes that people offered to the King. Giao Thuy nem nam has been passed down by many generations of people until today and gradually became a familiar dish, close to the people of Thanh Nam. Nowadays, when mentioning delicious dishes, regional specialties, Giao Thuy nem nam is also listed in the famous culinary group, not to be missed when coming to this delta land.
The main ingredients to make this "specialty" dish include pork and pork skin. For pork skin, the nem maker must choose the skin from healthy, firm pigs. The skin is usually chosen from the head, not too thick, and not too fatty. This way, when making nem, it will not be greasy or soggy. After being boiled and cleaned, the pork skin is sliced very thinly by hand. The pork must be taken from the slaughterhouse while the meat is still hot and should not be placed on the ground. In particular, the pork used to make Giao Thuy nem nam is not washed in too cold water to ensure that the meat will be more delicious and supple.
Thinh - the ingredient that creates the aroma and blends the ingredients. Thinh is roasted, finely ground rice. Thinh must be made from Hai Hau fragrant rice by soaking the rice overnight, draining the water, roasting until the rice turns ivory yellow and then grinding it finely. Then, mix the 3 ingredients of meat, skin, and thinh and form a spring roll, then wrap it in fig leaves and banana leaves. The next ingredient of Giao Thuy spring rolls is Sa Chau fish sauce. This is a traditional fish sauce mixed as a dipping sauce for spring rolls. Other ingredients that contribute to making the spring rolls more delicious and refined are: garlic, chili, fig leaves, and ginseng. Nem nam must be eaten with fig leaves or ginseng leaves. In addition to the rich sweetness of the meat, the crunchiness of the pork skin, plus a little astringency of fig leaves or ginseng leaves, the dish is truly delicious.
Nem nam is not only a dish that occasionally appears in every family dinner in Giao Thuy, but it is also a dish that families often order to entertain guests on death anniversaries, weddings, and Tet holidays. Nowadays, nem nam in Giao Thuy is famous throughout the country, it is not difficult for us to see it in luxury restaurants and beer bars.
