Kim Long village belongs to Hai Que commune (Hai Lang district, Quang Tri), with a history of 600 years. The wine-making profession was born 200 years ago, famous since feudal dynasties, famous during the French colonial period and developed to this day.
According to Dai Nam Nhat Thong Chi compiled during the reign of King Tu Duc, in the eighth volume of the Local Products section, it was commented: "Kim Long wine in Hai Lang, Quang Tri is the best". This adds to the solemnity and reputation of the once glorious position of Kim Long wine.
During the French colonial period, after surveying many wine-making villages in the Central region, the French chose the Kim Long area, occupied all the wine-making factories and established the Xika wine company. The wine was bottled, soaked in cold water, then taken by boat to Vinh Dinh River and transported to Hue before being shipped to France by large ships and exported around the world. The French had brought this technology back to their country for production but were unsuccessful.
Inheriting the historical reputation, today Kim Long people preserve the traditional way of making wine. After 5 days and nights of continuous soaking, 3 kg of rice produces one liter of wine.
The wine is made using the "water-based" method. The rice wine is contained in a copper pot, the fire causes the alcohol vapor to rise, and when it meets the cold water in the wooden pot, it condenses into wine. The distillation process must ensure a steady fire and a steady heat into the copper pot. Kim Long people choose the casuarina tree, a type of tree that grows on sand and has a sturdy trunk that burns slowly, as fuel to make wine.
Kim Long village has 300 households making wine with an output of 3-5 liters/household/day, earning about 2 billion VND annually. "The wine made is distributed by the households themselves to many provinces and cities across the country. Currently, the craft village is building a brand to bring wine to the supermarket system, stores... expanding the market nationwide to increase the selling price and increase income for the households making the craft.
