Tuyen Quang, Vietnam is a land of ethnic diversity, famous for its richness and diversity of culture as well as cuisine. Before the day of harvesting the fish, the people here have prepared ingredients such as sticky rice, yeast, and woven baskets for fermentation. After 4 days, when the sticky rice has fermented and smells like wine, the people go out to drain the water in the fields to catch the fish. The steps of gutting the fish are also carried out carefully, avoiding breaking the fish gall bladder so as not to spoil the fish sauce. At the same time, the people also prepare betel leaves and red rice leaves, then chop them and wash them.
The fermented sticky rice is mixed with fish, galangal, betel leaves, red rice leaves, and salt, then poured into a jar and sealed. After 10 months, when the jar is opened, the fish sauce from Chiem Hoa has a purple color and the fragrant smell of sticky rice, yeast, galangal, betel leaves, and red rice leaves.
Nowadays, Mam Ca Rong has become a famous specialty of Tuyen Quang and a symbol of Vietnamese cuisine. The development of this dish not only contributes to enhancing the tourism value of Tuyen Quang but also brings opportunities for domestic and foreign tourists to better understand the special culinary culture of Vietnam.
